Birria ‘Las Margaritas’
Las Margaritas, located just outside La Merced’s huge main market building, is a modest stand made up of a couple of tables enclosing the cooking area. But don’t be put off by the apparent simplicity because this family, originally from Guadalajara, prepares some of the richest beef birria in town. We usually stop for a couple of tacos with all the trimmings accompanied with a small bowl of poetically rich consommé.
