Taco Time: Pastor Negro at El Trompo Imperial

This funky locale—the creation of ex-music promoter Carlos Ruiz who appears to have stepped out of the late birthplace of Punk, CBGB’s—looks like any other neighborhood taqueria; But it is much more than that; tacos and salsas are meticulously handcrafted, creative without being pretentious. Featured is “pastor negro”, a variation on the traditional red al pastor (which is also offered), whose marinade is blackened by charred chilies, giving it a smoky depth. Tortillas are of local heirloom corn, a plus.
